Two different sourdough breads from Tartine Bread.
70% full grain wheat (Tartine)
Ciabatta with poolish and levain. Haven’t tasted yet, but looks and smells delicious.
My first attempt at “Basic Country Bread” from Tartine Bread.

Rye Sourdough (with a lot of rye and a very high hydration, around 90% if I remember correctly)
Sourdough at 60% hydration. Pretty good, but maybe not proved enough?
