Finnish cinnamon buns — here’s my recipe
20 g fresh yeast500 g full fat milk (heat to 42 degrees Celcius)
8 g cardamom
1 egg
150 g caster sugar
1 teaspoon salt
800 g white flour
180 g unsalted butter
Mix all ingredients and work the dough for 10 minutes. Leave to rest for an hour at room temperature until about doubled in size.
Flatten the dough to a square on the table, sprinkle with butter, cinnamon and sugar. Roll the dough and cut to shape. Leave to rest for about another hour, glaze with egg.
Bake in 225 degrees Celcius until golden brown (about 15-20 minutes) View high resolution
